The beverage is so high-quality and distinctive because it is typically made by hand.

The sweet and spicy Xiaman is "artisanal," meaning manufactured by hand using only man or donkey power.The two agaves used to make this premium spirit are 50% Espadn "Angustifolia" Agave and 50% Tepextate "Marmorata" Agave. This was created using an old recipe.

Each and every hand-picked agave is meticulously examined and hand-cleaned.
Then the agave hearts are beeing roasted using local firewood from the vicinity and locally constructed earth ovens. Our own yeasts spontaneously ferment the agave juice. After the distillation is finished, the first generated liters are ceremonially dumped upon the "holy earth."

This fine spirit has a flavor that has been described as fruity, peppery, and sensuous.

This unique beverage has a lightness from the light menthol freshness, which is well balanced by the flavor of smoky honey.

This combination of roasted Tepextate & Espadn Agave is of the best quality and complies with all requirements stipulated by the Mezcal Regulatory Council. It contains 44% alcohol (authority).
